Millie Hiett celebrated her 100th birthday at Caer Gwent on Thursday 1 July. Millie was a recipient of the Royal Red Cross after the war for her services to her country.

Food Safety (CIEH)

CIEH Level 1 Certificate in Food Safety Awareness

Course Description


This qualification is ideal for new kitchen staff or catering assistants who have minimal or no prior food safety knowledge.


The course covers:


  • How to keep clean and hygienic
  • How to keep work areas clean
  • The role they play in reducing contamination
  • How to identify common food hazards
  • The common symptoms of food poisoning and those people most at risk
  • Stock rotation

After successfully passing a multiple-choice exam, candidates will be prepared for low-risk food handling duties.

CIEH Level 2 Certificate in Food Safety in Catering

Course Description


This qualification is suitable for anyone working in a catering or hospitality setting who prepares food.

  • Safe food storage
  • Food handling
  • Premises and equipment

There is a multiple-choice examination.

Everyone who has taken the CIEH Level 2 in Food Safety in Catering is recommended to take a refresher course three years after completion to ensure best practice within the workplace.

  • The work environment
  • Product safety

Participants must provide a copy of their current Level 2 Certificate in Food Safety in Catering.

This qualification will benefit anyone who prepares and serves food. It provides candidates with a good, basic understanding of nutrition that will enable them to plan well-balanced meals that will have a positive impact on health.

The relationship between health and diet
The nutritional requirements of different groups of people
Standards and recommendations for catering for certain groups
How food preparation and processing affects the nutritional value of food
Information on food labels

The certificate is valid for 3 years.
